Harvesting the First Greenhouse Greens

Today I have to go to my job away from the farm. So in the greenhouse I will simply just water it and make sure it all looks well. But tomorrow is the first official harvest day. The Toscano Kale is ready and I should be able to get a 1/3 lb of it. The mustard and the arugula are well lets just say out of control.

I have some beds of various greens that will go in the salad mix that need thinning out but because they are so expensive to buy individually I will wait until they get bigger so I can transplant them vs just pulling them and tossing them. It seems like when you buy salad mix seeds there are more of the common things like the leaf lettuces but the more non traditional items like Tat soi, Mizuna, and Red Mustard aren't enough. So we bought more of what we were missing out on last year.

Tomorrow I will be taking pics to show you what we have and what each thing looks like as it's growing. It takes quite a bit of time to harvest the greens because I have to pluck each leaf individually. So there is very little product for amount of time put into it. But the taste is fantastic!

I collected a little bit of spinach, hen peck mustard, mizuna, and kale and added that to a little romaine I had in the frig for a nice little salad for dinner last night. Matthew who drowns everything in Ranch couldn't tell any difference in the flavors. My brother said it was a nice salad. Jeff could pick out the individual and loved it. Finally someone with a discernible pallet haha.

What I am thinking of doing with I harvest tomorrow is just mix it all together and sell it as a salad mix until everything starts coming in. If the restaraunts don't want it then I will just use it for Thanksgiving dinner at one of the many stops we have to make.
