Tomato Pies

We have been trying to figure out if we want to continue to keep the baking aspect in our business plan. I enjoy baking and creating things in the kitchen. So that is not the issue. Profitability is the issue at this point. If it were not for the tomato pies I could probably eliminate the baked goods but these things took off like crazy last year. I have had people calling me and wanting one during our closed time. I even went to the Town Hall last week and the lady in there said she has had so many people coming in and asking when we were going to open because they wanted a tomato pie. After about the 50th one I get tired of making them. But what I am thinking about doing is having the full baked good list offered during strawberry season and after that season is over with and we slow down, doing a scheduled baking. For example, Thursday will be tomato pie day. I can stay late on Wed and get them made so that i will have them throughout the weekend. If business picks up more than last year then maybe I won't have to do the scheduled baking but for my sanity I think this will be the plan.
